Most pho is beef, so ask for "pho ga" (chicken). Also try banh mi, banh xeo, fresh spring rolls, cao lau in Hoi An and iced ca phe sua da. Fish sauce goes into nearly everything, so look for "chay" restaurants, which are Buddhist and fully vegetarian. Indian restaurants are easy to find in Hanoi, Hoi An and Ho Chi Minh City, and street food is safe where you see lots of locals eating.
